Renew your body with spring vegetables

Spring has come and you may have noticed spring vegetables lined up at supermarkets and groceries. Spring vegetables such as bamboo shoots, spring cabbage, taranome shoots, new onions, asparagus, and beans have a fresh green color and lovely scents that bring spring to our tables.

Spring vegetables are rich in vitamins and minerals that can help loosen up your stiffened winter body. The unique scent and the slightly bitter taste of spring vegetables can help to regulate digestion and boost the immune system. They can also help you detoxicate and clean up your body.

Recipe: “Boiled Tosa Bamboo Shoots”
Ingredients
Boiled bamboo shoots 300g / Soup stock 1 cup / mirin 1 tbsp / soy sauce 2 tbsp /  katsuobushi (dried bonito flakes) 5g
Instructions
Cut bamboo shoots into 1 cm pieces. Add soy sauce and mirin into soup stock and set to boil. Add ① to the mixture and leave to boil. Turn down the heat to medium-low and simmer until most of the sauce is gone. Add dried bonito flakes in .
